Simple pancake recipe

    ...or any time as pancakes are soooo nice

    With Shrove Tuesday (also know as Pancake Day or Mardi Gras) only a couple of weeks away, Moley has been testing a few pancake recipes for you.

    Our favourite pancake recipe that has worked for us for many years makes great pancakes - and best of all the recipe is quick and very, very simple.

    Ingredients for 12 pancakes:

    • 110g white flour;
    • 200 ml milk
    • 80 ml water
    • 2 large eggs
    • pinch salt
    • 2tbs butter

     

    Preparing the pancake mixture:

    • Combine the water and milk in a jug
    • Sieve the flour and salt into a large bowl
    • Make a well in the centre of the flour
    • Break the eggs into the well
    • Whisk the eggs, gradually incorporating more and more flour from the edges
    • Gradually add the milk and water to the mixture, whisking all the time
    • Keep whisking the pancake mixture 'till any lumps have disappeared
    • Use a rubber spatula around the edges of the bowl to eliminate any flour sticking to the edges
    • Whist a bit more 'till the pancake mixture is nice and smooth
    • Note that you do not need to let this pancake mixture settle, it is ready to use straight away.

     

    Cooking the pancakes

    • When ready to cook the pancakes, stir in two tablespoons of melted butter to the pancake batter
    • Melt 1 teaspoon of butter in a heavy, flat bottomed non stick frying pan, ensuring it coats the whole of the pan
    • Heat the pan 'till very hot and then turn the heat down a bit
    • Pour half a glass of the pancake mixture into the pan. Note that you'll need to experiment a bit to work out the best quantity of pancake mix for the thickness of the batter, the size of the pan and the thickness of the pancake you like...ideally the pancakes should be as thin as possible.
    • Immediately tip the pan from side to side to get the pancake mix to evenly coat the base of the pan
    • Keep the pan on medium heat. If the pan is hot enough, the pancake should take just 30-40 seconds to cook
    • Flip the pancake (if you dare) with a positive circular movement (keep pets and smaller kids out of the way just in case) or use a plastic or wooden spatula to help>
    • The second side of the pancake should only take about 20 seconds or so
    • Slide the lovely golden pancake onto a plate to serve
    • Use a quarter tsp of butter on the pan before starting the next pancake. You really do only need a small amount to ensure the pancake does not stick. Too much and the pancake will fry which is really not what you want.

     

    Pancake fillings

    There are no hard and fast rules for pancake fillings. Anything goes really - sweet or savoury - but a general rule is to keep things simple.

     

    Moley's favourite pancake fillings

    • Teaspoon of sugar and squeeze of fresh lemon juice - traditional but by far the simplest and nicest pancake filling
    • Sprinkle of grated chocolate (we prefer darker chocolate), or failing that choc spread or even a tsp of chocolate powder with a bit of sugar
    • Tsp of runny honey maple syrup

     

    Enjoy!!! If you run out of pancake mix, it's a simple job to make some more. And of course, if you have some pancake mix left over, cover it, put it in the fridge and make more pancakes for breakfast. Yummmmmmm.

    Pancake recipe works a treat. Yes

    The quantities given made 10-12 pancakes...though depends a bit on skill and how many times you pour too much pancake mixture into the pan...
